Five Spice Chicken

Chicken is good. Chicken flavored with five spices is even better!

Ingredients

1 whole chicken, cut into 8 pieces

2-3 cm ginger, peeled and sliced

A few pieces garlic, peeled and smashed

¼ teaspoon five spice powder

3 pcs star anis

1 tablespoon brown sugar

½ cup soy sauce

1 cup chicken broth

4 tablespoon oyster sauce

 

How to: put all the ingredients together in an ovenproof dish with lid.

Cover and bake at 200 C for 40 minutes… yes it’s so easy

Now remove the cover and return it to the oven for another 10 minutes.

By now the chicken should be nicely browned and the broth reduced to a tasty stock

Serve with steamed rice and stir fried greens

Note: I seldom have five-spice powder on hand, so I substitute it with 1 whole cinnamon stick, some Sichuan peppercorns, 2-3 gloves and some fennel seeds. The fifth spice is the star anis anyway, just put one more if you like
